German Strawberry Dessert Recipes

German strawberry dessert recipes using fresh strawberries. Pick strawberries straight from your garden or go strawberry picking and whip up these amazing strawberry desserts. We have already enjoyed the first strawberries, wash them, sprinkle with a little sugar or melt chocolate over a water bath and enjoy chocolate strawberries.

Strawberry Swiss Roll Recipe
Erdbeer Biskuitrolle

To make my light strawberry swiss roll recipe you will need:

5 eggs
2 packets vanilla sugar
70g (2 3/4 oz) flour
60g (2 1/2 oz) cornflour (cornstarch)
1 pinch of baking powder
1 pinch of salt
300g (10 oz) fresh strawberries
300g (10 oz) whipping cream
1 dessert spoon (1/2 tablespoon) icing (powder) sugar
1 packet Sahnesteif (cream of tartar) or (baking soda)

Separate the eggs. Whip the egg whites with salt until firm. Whisk the egg yolks with 1 packet of vanilla sugar and then fold into the egg white mixture.

Then carefully fold in the flour, cornflour and baking powder.

Line a baking tray with baking paper. Spread the mixture on the tray until it is evenly distributed. Bake in a pre-heated oven at 180 degrees C for about 15 minutes.

Once bakied turn out the swiss roll sponge onto a clean tea towel. Leave to cool slightly and then roll up lightly into a roll. Leave to cool for a further 10 minutes.

Quarter the strawberries. Whip the cream, icing sugar, 1 packet of vanilla sugar and cream of tartar together until firm. Mix in the strawberries.

Carefully unroll the sponge base. Remove the tea towel. Spread over the cream and strawberry mixture until evenly distributed.

Roll up carefully and place in the fridge for at least 30 minutes. Before serving sprinkle with icing sugar.




Strawberry Smoothie Recipe

To make this light strawberry smoothie recipe you will need:

500g (1 1b) strawberries
3 leaves gelatine
juice from half a lemon
50g (2 oz) sugar
1 packet vanilla sugar
2 egg whites
150g (6 oz) creamy white joghurt
1 tablespoon grenadine syrup
4 mint leaves

Soften the gelatine in cold water. Slice the strawberries. Place about a quarter of the strawberries in a cold place, ie the fridge.

Puree the remainder of the strawberries with lemon juice, vanilla sugar and half of the sugar.

Whip the egg whites until firm and then carefully fold in the remaining sugar. Leave in a cool place.

In a pan, heat 5 dessert spoons of the strawberry puree and then place the gelatine leaves in the pan and mix until dissolved.

Mix in the joghurt and then carefully fold in the whipped egg whites. Divide the mixture into 4 glasses and leave in the fridge for 5 hours to set.

Mix the remaining strawberries with the grenadine syrup. Just before serving distribute over the top of the strawberry dessert.

Decorate with mint leaves.


Strawberry Banana Muffins
Erdbeer Bananen Muffins

To make 12 strawberry muffins you will need:

175g (7 oz) flour
120g (5 oz) sugar
120g (5 oz) buttermilk
1 egg
50g (2 oz) ground hazelnuts
100g (4 oz) oats
1 ripe banana
80g (3 1/2 oz) strawberries
1 tablespoon lemon juice
1/2 teaspoon grated lemon rind
1/2 teaspoon baking soda
2 teaspoons baking powder
50ml (1/4 cup) vegetable oil
little extra lemon juice and icing (powder sugar)

In a large bowl mix the flour, nuts, oats, lemon rind, baking powder and baking soda together. Place to one side. Beat the egg and then fold the oil and sugar into the egg.

Puree the banana with buttermilk and lemon juice and then mix into the egg mixture.

Lastly add the flour mixture and mix well.

Slice the strawberries and fold into the muffin mix.

Bake the mixture in muffin tins and bake in a pre-heated oven at 180 degrees C for 25 minutes.
