Here is my easy German potato salad recipe. Or (Kartoffelsalat) as it is known in Germany. Each region in Germany tends to have their own homemade potato salad recipe. My mother-in-law gave me this recipe, so it is an authentic recipe.
Make sure that all the potatoes are even in size so that they are all cooked at the same time. You can use large or small, as you wish.
My recipe is easy to make and tastes delicious. Served just warm or cold with meatballs, Maultaschen or a slice of grilled meat, this recipe is sure to be a winner. Make a big batch, invite some friends round for a barbecue and enjoy! This recipe is best served warm.
Ingredients
8-10 salad potatoes 1 onion 1/2 cup of warm meat broth white wine vinegar, sunflower oil and salt to taste pepper
Steam the potatoes in their skins until tender. If you have any potatoes from the day before, even better as they are easier to slice. Scrape them and let them cool slightly until just warm. Chop the onion finely. Slice the potatoes thinly with a potato slicer or a vegetable knife. Place in a large bowl. Add the onion and enough warm meat brothso that the potatoes are quite moist but not sitting in broth! and leave to soak for an hour. Lastly add enough sunflower oil, vinegar, salt and pepper to taste. Again I can`t give exact quantities but I suggest that you start off with a couple of tablespoons of each of the oil and vinegar and then add more to taste. Mix thoroughly. The potato salad should not be too dry, but quite moist. Serve with your favourite German recipe such as Wiener Schnitzel.
Authentic German Potato Salad with Cucumber
Prepare the potato salad as above. Peel one whole cucumber and thinly slice(but not paper thin). Add at the very end and mix through. Sprinkle one dessert spoon of finely chopped dill over the salad.
