Chocolate Sheet Cake

Easy Chocolate Cake Recipe

This is a very easy chocolate sheet cake recipe. It is made with almonds and lots of chocolate of course. In Germany it is known as Schokoladenbrot which means chocolate bread.

Ingredients

250g butter
250g sugar
6 eggs
250g grated dark chocolate
250g grated almonds
100g flour
150g apricot jam

For the chocolate icing

150g dark chocolate
80ml condensed milk
1 dessert spoon honey

For 1 baking sheet

Preheat the oven to 160 degrees C. Put the butter and half of the sugar in a bowl and beat together with a hand mixer until creamy. Separate the eggs and mix the egg yolks gradually into the mixture.

Beat the egg whites with 3 dessert spoons sugar until creamy. Then add the remaining sugar and beat until stiff. Mix together the grated chocolate, almonds and flour mix into the butter mixture. Then carefully fold in the egg white mixture.

Place the mixture evenly on a sheet baking tray (lined with baking paper) and smooth flat with a knife. Bake in the bottom half of the oven for about 40-45 minutes until light brown. Remove from the oven and leave to cool. When cold, spread over the apricot jam.

To make the icing: Finely chop the dark chocolate and place in a metal bowl with the condensed milk and honey. Melt over a pan of hot water. Brush the chocolate icing over the cake and leave to harden.

To serve, cut the sheet cake into squares. Continually dip your knife into hot water to ease cutting of the cake.

If liked, once you have coated the cake with the icing, decorate with candied fruits, hazelnuts or pistachios.
