Green Bean Salad Recipe
German Bohnensalat
This German bean salad recipe can be made from the bush variety or long thin green beans. Obviously the cooking time will depend on which type you choose. After cooking, plunge the green beans into ice cold water so that they keep their intense green colour. To make my green bean salad you will need the following:
Ingredients
500g green beans 2 dessert spoons red wine vinegar pinch mustard powder 1 dessert spoon red wine pinch pepper 3 dessert spoons oil 1 small onion 1 tsp parsley
Wash beans and cook in salt water (depending on type of bean) for 12-20 mins. Don't overcook so they are too soft! Strain through a sieve and rinse with ice cold water. Put the drained beans in a bowl. Mix together the red wine vinegar, mustard powder, red wine, pepper, oil and finely chopped onion and mix with the green beans. Lastly sprinkle with finely chopped parsley.
