German Pound Cake Recipe
German Sandkuchen

This is such an easy German pound cake recipe you'll want to bake it again and again.

Light in the texture of fine sand which is why is it known as Sandkuchen in Germany.

Traditionally a pound cake was made by using one pound of butter, one pound of sugar, one pound of eggs, and one pound of flour. My cake has different proportions from the original, and is great for those of you new to baking.
Make sure all your ingredients are at room temperature and sieve your dry ingredients as this is very important when baking this cake.

It is also important to beat lots of air into your eggs and fold all the ingredients in carefully. If you have any leftover cake you can use it for the base of many desserts such as a trifle or a strawberry cake.



Pound Cake:
125g white flour
200g sugar
125g dark chocolate
1 packet of vanilla sugar
1/2 tsp baking powder
12g cornflour (cornstarch)
250g butter
pinch of salt
4 eggs


Melt the butter in a pan, pour into a mixing bowl and leave to cool.

When the butter has gone hard, mix with a hand mixer or electric mixer for about half a minute until creamy.

Gradually add the sugar, vanilla sugar, conrnstarch and salt. Mix well.

Add one egg at a time to the butter, beating for at least 30 seconds after the addition of each egg.

Sieve the flour, conrnflour and baking powder into a separate bowl and add the dry ingredients a tablespoon at a time, mixing after each addition.

Grease your loaf tin and then pour in the pound cake mix.

Bake in the middle of a preheated oven at 150 degrees C for about 60-70 minutes.

Leave to cool for a few minutes before turning the cake out onto a wired rack.

Melt the chocolate in a heatproof bowl over a pan of hot water and then pour over the cooled cake.

Cut into even slices and serve.

Alternatively you might like to dust the pound cake with icing sugar (powder sugar) or decorate with smarties and candles to use as a childrens birthday cake.

As I mentioned, any leftovers can be used for the base of a trifle.
