Black Forest Gateau

Black Forest Gateau

125g unsalted butter
1 cup caster sugar
100g ground almonds
4 large eggs
100g dark cooking chocolate, melted
½ cup plain flour
½ cup cornflour
2 teaspoons baking powder

Filling and Topping Mixture

½ cup white rum
¼ cup black cherry jam
1 x 680g tin cherries in syrup, drained and pitted
600mL thickened cream, whipped
100g chocolate curls or grated chocolate


1. Grease and line three 20cm sandwich cake tin. Preheat oven to 180C
2. Beat butter and sugar till light and Creamy. Beat in the almonds, eggs and chocolate.
3. Sift flour, cornflour and baking powder over the mixture and fold in with large metal spoon.
4. Place mix in tins evenly and bake for 20-25 minutes or until firm.
5. Place cake on rack to cool
6. Sprinkle 8 teaspoons of rum over the cake and then spread over a layer of Jam, Cherries and ½ of the cream between 2 of the cakes.
7. Place them on top of each other and the 3rd cake on top. Spread with remaining cream and decorate with grated/curled chocolate.
