German Green Bean Salad Recipe

I tend to make this bean salad recipe very often when green beans are in season.  It is extremely easy to make and very flavoursome.  I think it is the dressing that gives it the extra kick.  I don't know about you but I love olive oil and red wine vinegar and the combination really complements the green beans. Give it a go and see what you think.


This German bean salad recipe can be made from the bush variety or long thin green beans. Obviously the cooking time will depend on which type you choose. After cooking, plunge the green beans into ice cold water so that they keep their intense green colour.

If liked, you can add cooked cubed ham or cubed potatoes. I particularly like the tangy dressing in this recipe. Serve with your favourite German meat recipe, with fish or as a side dish at a barbecue.

To make my green bean salad you will need the following:



German Bohnensalat


500g green beans
2 dessert spoons red wine vinegar
pinch mustard powder
1 dessert spoon red wine
pinch pepper
3 dessert spoons oil
1 small onion
1 tsp parsley

Wash beans and cook in salt water (depending on type of bean) for 12-20 mins. Don't overcook so they are too soft! Strain through a sieve and rinse with ice cold water. Put the drained beans in a bowl.

Mix together the red wine vinegar, mustard powder, red wine, pepper, oil and finely chopped onion and mix with the green beans.

Lastly sprinkle with finely chopped parsley.
