Welcome to this autumn issue of Sausage and Kraut. On the menu this time we have a selection of German easy pumpkin recipes for you to try. There is an easy pumpkin soup recipe, pumpkin bread pudding and pumpkin pancakes to warm you this autumn.

The pumpkin is so versatile. Not only is it great for cooking with but it also brings colour as a table decoration for inside or out.

I don't know about where you live but here in Bavaria we have enjoyed some fantastic summer weeks. Today, however, the weather has a very autumnal feel and now it is a time for a change in the foods we eat.

Pumpkin Soup Recipe


My pumpkin soup recipe is dead easy to prepare and is great to serve as a starter or for lunch with crusty bread.

To serve 6

1 hokkaido pumpkin (about 1kg)
4 small onions
olive oil
1 1/2 litres vegetable stock
salt and pepper
1 dessert spoon sweet paprika powder

Wash the pumpkin, cut in half and remove the seeds. You don't need to peel the hokkaido pumpkin by the way. Cube the pumpkin. Peel the onions and finely cube. Heat the olive oil in a pan and saute the onion gently. Add the pumpkin and the vegetable stock. Simmer for about 25 minutes.

Remove the pan from the heat and leave to cool slightly. Then puree. Season with salt and pepper and paprika.

Just before serving you can add a spoon of cream and swirl it through.

Extra tip. If you like a creamy soup, then after puree-ing stir in 200g cream, but remember to reduce the amount of stock you use.

Pumpkin Pancake Recipe With Bacon

Pfannkuchen mit Kürbis und Bacon

To serve 4

250g flour
salt and pepper
3 eggs
500ml milk
5 thin slices of bacon
500g hokkaido pumpkin
40g butter
4 dessert spoons chopped chives

Sieve the flour with a little salt and pepper into a bowl. Add the eggs and a little of the milk to the flour mix and mix well. Then add the remaining milk little by little until the batter is smooth.

Cut the bacon into 1cm wide stips. Wash the pumpkin, cut and remove the seeds. Then very finely slice. Fry the bacon, without fat, in a pan, until crispy. Remove the bacon and leave to drain on kitchen paper.

Fry the pumpkin in a little fat for about 2 minutes. Remove and set aside.

Heat the oven to 180 degrees C. Heat a little butter in a pan. Now you need to prepare 8 mini pancakes using the batter/dough, the bacon and pumpkin. Take about 2 desserts spoons of the dough and add to the pan. Top with the bacon and pumpkin and let the pancakes solidify in the pan over a low heat. Do this for the 8 pancakes!

Place the pancakes on a baking tray lined with baking parchment and bake in the oven for about 5 minutes until golden brown.

Serve with the chopped chives sprinkled over the top.

Pumpkin Bread Pudding Recipe

Kürbis Brot Auflauf mit Käse

To serve 4

1 packet of pumpkin bread ready mix or bought pumpkin bread
1 hokkaido pumpkin (about 300g)
2 dessert spoons olive oil
200g mature cheese
salt and black pepper
4 eggs
250g cream
35g pumpkin seeds

Prepare the bread if using a packet mix. Once baked, leave to cool.

Wash the pumpkin, cut in half and remove the seeds. Slice the pumpkin in 2cm wide slices and then cut each slice into 3 pieces. Fry the pumpkin slices in hot oil for about 3 minutes. Season with salt, pepper, a little sugar and nutmeg.

Slice the pumpkin bread into thin slices and then cut in half. Layer the bread and the pumpkin alternately in a well greased baking form. Grate the cheese and then sprinkle over the top. Mix the eggs and cream together and season to taste. Pour the egg and cream mixture over the bread and pumpkin pudding. Sprinkle with pumpkin seeds and bake in the oven at 180 degrees C for about 25 minutes.

Don't forget you can use pumpkins as table decorations too. Hollow out a pumpkin and use it as a vase. Fill with autumn flowers, leaves and berries for a stunning centerpiece.

Pumpkins are also great to use as place card holders. Simply tie your place card around the stalk of a mini pumpkin.
