Rice Pudding Recipes

How To Make Rice Pudding
Basic Recipe


Enough for 4 people

1 vanilla pod
500ml (2 cups) milk
pinch of salt
1 piece of lemon rind - organic if possible
50-60g (2 1/2 oz) sugar
125g (5 oz) pudding rice
1 dessert spoon (1/2 tablespoon) butter

Scrape out the seeds from the vanilla pod with a sharp knife.

Put milk, salt, butter, lemon rind, the vanilla pod and seeds in a pan and bring to the boil.

Add the rice and whilst stirring bring to the boil once more and then turn down the heat to the lowest temperature.

Put the lid on the pan and leave the rice to cook for about 30 minutes. Keep an eye on it as it will depend on the size of the rice grains as to the exact cooking time.

Add a little butter to the cooked rice. Remove the vanilla pod and serve the rice warm or cold.

TIP Rice can burn on the bottom of the pan very easily. So that it doesn't stick to the bottom always stir in the shape of a large figure 8.




Chocolate Rice


Enough for 4 people

100g (4 oz) rice
800ml (3 cups) milk
50g (2 oz) powder sugar (icing sugar)
2 tablespoons unsweetened cocoa powder
pinch of salt


Boil the milk in a pan. Add the sugar, salt and cocoa powder and stir. Bring to the boil once more. Add the rice and cook over a very low heat. Stir regularly, the rice will take about 30 minutes to cook.

Remove the pan from the heat and leave the rice to cool. Pour into 4 dessert glasses and leave to cool for minimum of an hour.

You can also add finely grated orange peel or Cointreau to the chocolate rice for a fruity autumn taste.

Another idea is to put the chocolate rice in a glass jar with a lid - great to take to parties.

Baked Rice Pudding
With Damson Plums


Enough for 4 people

750g (1 1/2 lb) damson plums
1 litre (4 cups) milk
pinch of salt
300g (10 oz) short grain white rice
2 tablespoons sugar
cinnamon

Preheat the oven to 200 degrees C. Wash the plums and cut in half. Remove the stones and then cut a 1cm cut into the top end.

In a pan bring the milk to the boil. Add the rice and half the sugar. Bring to the boil once more and then pour into a 2 litre baking dish.

Arrange the damson plums over the rice on the diagonal. With the cut side up! Bake in the middle of the oven for about 25 minutes. Sprinkle with remaining sugar and cinnamon.

TIP Damson plums are great for this rice pudding recipe as they hold their shape. If damsons are not available you can use apples or pears.
