Pflaumenmus - Plum Jam

I'm not sure how it is spelled, but it is great. It is plum jam, and it occupies that small space where sweetness and tartness rarely meet. It is available in most German market, but I remember having had some of the home-made version of this which was even better than what you can buy in stores. Can you help?

Hello there

I corrected the title of your recipe you are searching for.

It is actually like plum compote and really is delicious so I can see why you would like the recipe.

To serve 4 people:

3 kg plums
500 g jam sugar
1 unwaxed lemon, cut the rind into strips
2 cinnamon sticks
ground ginger to taste

Wash the pums, dry and remove the stones. Chop into very small pieces.

Place the plums in a deep baking dish with the rest of the ingredients. Mix together well and bake in the oven at 175 degrees C for about an hour and a half. Stir through frequently.

Secure a wooden spoon in the oven door so that the door is not completely closed. This allows the steam to be released and the plums to cook through. After cooking, remove the cloves, lemon rind and cinnamon sticks. Place the plum jam in sterilized jars and close immediately.
