German Baiser4 egg whites200g fine white sugar 1 heaped teaspoon cream stiffener or cream stabilizer (this is a German speciality item that is used to make cream stiff known as Sahnesteif) 1/2 teaspoon cinnamon powder Beat the egg whites with a hand mixer until creamy. Mix the sugar, cream stiffener and cinnamon and slowly beat one spoon at a time into the egg white mixture. Put the cream mass into a piping bag and pipe small mounds onto baking paper lined baking tray. Bake the German meringue cookies in a preheated oven at 120 degrees C for about 35 minutes. Remove the cookies from the baking tray and leave to cool completely on a wire rack.
