German Healthy Salad Recipes
Prepare quick easy healthy salad recipes. Great for summer and winter these German easy green salad recipes are a great side dish for meat and fish recipes.
Salad is served with every meal in our house. With a great dressing you can convince the fussiest of kids that salad is good for them.
A quick salad dressing consist of olive oil, balsamic vinegar, honey and lemon juice. Mix it all together and season to taste. This dressing transforms the dullest lettuce, and is in fact my son's favourite dressing.
It is always important to mix the dressing in the bowl first and then once ready to serve, pop the salad in the bowl and mix through. Otherwise there is a danger of soggy salad leaves.
Watercress Salad Recipe
Watercress grows in abundance in Bavaria. It is best when it is freshly picked and is one of my favourite healthy salad recipes.
You can mix it with lettuce or prepare it by itself. Remove any coarse stalks as they have a bitter taste.

For the dressing you will need:
3 tablespoons red wine vinegar
1 small red onion, chopped, optional
Beat the vinegar, oil, salt and mustard together. Pour over the watercress and mix through. Lastly add your optional ingredients.
Chopped Green Salad Recipe
In Bavaria, lettuce is known as green salad and is found in every restaurant. In all households it is prepared lovingly with lots of care using only the freshest salad.
You will need 1 - 2 heads of lettuce.
Clean the lettuce and cut off the stalk. Wash in salted water and spin in a salad spinner or shake dry in a colander. If you have any very large leaves then tear these up.
For the salad dressing you will need:
2 tablespoons white wine vinegar
1 small onion chopped, this is optional
Beat the oil vinegar and salt together, pour over the lettuce, add the herbs. Then mix carefully together.
Lastly add the optional ingredients.
