German Leek Potato Soup Recipe

When I was in germany several years ago a german lady gave me a recipe for German leek potato soup and some how it came up missing. It was so good but I don't remember what went in it. Can you help me? Joyce Summers smjoyc27@aol.com

Leek and Potato Soup

Here is how I make mine:

25g butter
3-4 leeks chopped
1-2 potatoes, peeled and chopped
water
salt and pepper to taste
cream or milk

Melt the butter in a pan and add the chopped leeks and chopped potatoes. Fry gently for about 5-10 minutes without browning.

Add about a litre of water, salt and pepper to taste and then simmer for about 20 minutes.

Puree the leek and potato soup until smooth. Taste for seasoning. Heat again in the pan and add milk or cream.

If liked you can add homemade croutons and chopped cooked bacon.
