bow donuts

by Michael Bradt
(Toronto, Canada)

Hi, thank you in advance for this website. In particular, the lost recipe tab.
In the 70's my Oma came to Canada and made many great desserts. Two of them I do not have a recipe for. One of them are what she called bow donuts. I remember she rolled out the dough and cut it in triangles with a slit cut in the middle. Then she would pull one end of the dough through the hole and make a bow. They were then fried until they were golden brown. They were then sprinkled with icing sugar and devoured. Yummy!

The other recipe resembled perogies. My Oma would stuff them with potato, sauerkraut and fried onions. They probably are perogies. She also made us ones filled with fruit. She would stuff them with peaches, berries and sweet cheese. Then she would pan fry them in bread crumbs and sugar.

Thanks in advance for all your help.
Much appreciated.
Michael Bradt

German Rabbits Ears - Hasenoehrl
by: Sarah

Hi Michael,

You are actually looking for a recipe called Hasenöhrl (rabbits ears).

To make them you will need:

140g (4 1/2 oz flour)
pinch of salt
40g (1 1/2 oz butter)
1 whole egg
1 egg yolk
1 tablespoon thick cream

Sift the flour onto a board. Add the salt and butter cut into small pieces. Then add the egg yolk, egg and cream and knead quickly into a dough.

Leave the dough to rest in a cool place for about 1/2 hour. Roll out the dough on a floured pastry board and cut into 3 inch squares with a knife. Cut a slit in the middle of each square and then pull one corner through the slit. Fry the rabbits ears in deep, hot fat until they are golden brown. Sprinkle with powdered sugar and cinnamon. Serve them hot or cold.

Enjoy the recipe.

Kind regards

Sarah
