German Dumpling Soup Recipe40g butter60g coarse semolina 1 egg salt and nutmeg 2 lites meat broth cooked strips of beef chopped chives Beat the butter until smooth and creamy. Add the semolina and egg alternately, a little at a time and mix well. Leave to stand for half an hour. Season to taste with salt and nutmeg. Heat the beef broth and then using 2 teaspoons form small dumplings from the semolina mixture. Place them carefully in the hot broth. Reduce the heat and simmer for no more than half an hour. If liked add strips of cooked beef and cooked carrots to the soup. Sprinkle with chopped chives just before serving.
