Best Meatloaf Recipe - German Hackbraten

My best meatloaf recipe. It is a tasty German recipe made with a mixture of ground meat (beef and pork or you can just use beef). Known as Hackbraten in Germany, the meatloaf is served with a thick beefy sauce (you can use your own favourite recipe) and Spaetzle or mashed potatoes (Kartoffelpuree) and vegetables. The whole family will enjoy my easy meatloaf recipe.

German Hackbraten

4 carrots
1 tsp butter
1 tsp sugar
salt
1 day old white bread roll
2 onions
2 tbsp finely chopped parsley
600g (1 1b 4oz) mixed ground beef and pork
1 egg
pepper
2 tbsp chopped thyme
2 hard-boiled eggs

Peel the carrots, wash and slice them. Cook in 500ml water with butter sugar and a little salt for about 15 minutes until tender. Drain and put aside.

Preheat the oven to 180 degrees C. Soak the bread roll in a little warm water until soft and then squeeze out the excess water. Then chop into small pieces. Peel the onions, chop finely and put into a bowl with the ground meat, beaten egg, the chopped soft bread roll, salt, pepper and chopped thyme.

Grease a baking tin and half fill with the ground meat mixture. Place the peeled hard-boiled eggs and cooked carrots on top and then fill with the remaining mixture.

Cook the meatloaf in the oven for about an hour (or until the ground meat is cooked through).

Cut into slices and enjoy my easy meatloaf recipe with a nice thick beef gravy.
